Peanut Butter Cupcakes with Banana Buttercream



I spent a majority of the holiday weekend baking (and eating) and this was a nice treat. I am on a huge Peanut Butter kick right now. This would be great with Jelly piped in the center also. Here is a pic of the PB cupcake..mini's with banana buttercream with mini Reese's Pieces. They were very dense but delicious. I didn't care too much for the look of the buttercream after adding the bananas but it tasted good. Mini's were just the right size for the richess these little guys packed.

Peanut Butter Cupcakes

6 Tbsp (3/4 stick) unsalted butter - room temp

1 cup peanut butter

1 1/3 cup light brown sugar

3 lg eggs

1 Tbsp vanilla extract

3 cups AP flour

1 Tbsp baking powder

1 tsp salt

1 cup milk

Preheat oven to 350. Cream butter, peanut butter, and brown sugar on medium until fluffy. Add eggs one at a time. Add vanilla. In seperate bowl, combine dry ingredients. Add dry ingredients to creamed mixture alternating with milk. Mix well. Bake 15-20 min. Cool in muffin tin.

Banana Buttercream

1 1/2 cups powdered sugar

7 Tbsp butter, softened

1 tsp vanilla extract

5 tsp heavy cream

1 mashed banana

yellow food coloring

Reese's Pieces

Whip together butter and sugar until creamy and smooth. Add vanilla and cream and beat..if you need more cream add by tsp testing consistency every few seconds. Add banana. Mix in food coloring. Pipe on cooled cupcakes. Sprinkle with Reese's Pieces.
