S'mores Cookies






S'mores Cookies
Oh my gosh...so I never was a girl scout (got kicked out at a young age) and never got the opportunity to camp out as a child but DAMN...eating this and fabricating memories of eating s'mores by an open fire comes to my daydreaming mind. I will say that my Chris has shown and given me many opportunities in our short time together (so far) and exposing me to the open fire or fireplace s'mores is one of them. When we were really poor we would roast the marshmallows over a candle flame. But back to this recipe. OUCH it is so good... and for me the frozen cookie dough is even better. I have linked the recipe and site here but I am going to put the recipe up too so you don't have to search for it. So if you get the time..make this cookie and take yourself back or in my case make it up; you won't regret it.
S'mores Cookies
2 sticks butter
2 cups brown sugar
1/4 cup white sugar
2 eggs
1 tablespoon vanilla
2 cups finely ground graham crackers
2 cups oatmeal
1 1/2 cups flour
1 tablespoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups chocolate chips
2 cups frozen mini marshmallows

In your Kitchen Aid or a large mixing bowl, cream together the butter and brown and white sugar.
In a small bowl, combine the egg and vanilla. Whisk together the wet ingredients and add to the butter mixture. Mix together until smooth.
In another large mixing bowl, add the dry ingredients. Using a spatula, fold together until evenly distributed. Slowly add the dry ingredients to the butter mixture. Mix until evenly combined.
Preheat oven to 350º.
Shape dough into balls--about 2 tablespoons each.
Place dough balls about 2 inches apart on Silpat- or parchment paper-lined cookie sheets.
Bake at 350º for 10 minutes. (Be very careful not to overbake them.) If the cookies feel too underdone when you remove them from the oven, let them set on the cookie sheets for two to three additional minutes. Then place cookies on wire racks to cool. Or you can eat warm...like the original s'more.

Perfect Days





I know that sometimes I tend to forget how wonderful life can be and is. I have a kidney disease and mine failed at the ripe age of 21...I am in remission after many years of struggle and putting everyone I love through hell. Steroids are the devil!! But today as I was taking pictures of my 'creation' and had my baby being the 'assistant' of the day I just sat back and inhaled. Life is Good. I could never ask for more than what I have now. The only thing missing is Chris but we will be together soon. Anyways...I had the most fun taking these pictures. And then to top the day off Lexi cooked dinner with me. It was so much fun. Again...a perfect day. Take time to inhale, smell the life around you, and smile. And have a cupcake to end the day if you can!

Experiments

I am so new at this and I will say that I have enjoyed it ALL!

I get much of my self worth from others .... sad huh! I totally love when someone eats my food and gets that look on their face like they can't believe I made that. This cupcake experiment has been wonderful for me. I have gained some confidence in knowing that I can do something that I originally thought I wouldn't succeed at. I unveiled my cupcakes at my mom's birthday party and they loved them. I hope that it wasn't just lip service. I enjoy them...enough to keep eating them when I shouldn't. It has also let me experiment more with my photography. I love taking pictures and now I can cook and take pictures of them...and then hope someone will eat the overabundance I have created..by the way.. if anyone has a recipe for like 4 cupcakes...please send to me.

I have also continued with my love affair with Halloween. I will post more about that on my personal blog. This has to be the best time of year for me. The only thing missing is my husband Chris.

Big Accomplishments and Blown Diets




Just a little sneak peak into the Iron Cupcake Recipe I am working on. I will say this...I am so excited about it. And have so far received rave reviews from the 'judges' here on the home front. I am proud of myself. I concocted the whole thing from my mind which is surprising because I am typically a big cheater. On the sadder side of the whole thing...I have totally blown my diet that was based on ABSOLUTELY NO sugar or flour...damn it! Guess it's a good thing the cupcakes are delicious so I don't have to keep taste testing...Or do I???? There is the perfecting of the icing..Ha!Ha!... I must go whip something up (before my blood sugar drops and I need a nap!)

Lexi's PlayDough











This is the best helper any baker could ever dream of. She loves to come in and help me get all our cooking done. I am doing my best at teaching her how to cook because as a child I was always told to stay out because I was messy...think thats where the dumb ass OCD I have now comes from? Needless to say here we are making PlayDough. This is the coolest because you never have to buy it from stinky *mart once you have the recipe. Plus it is cool to make the colors you like. The Neon food coloring makes vivid colors and the paste works excellent too.


Lexi's Dough

1 cup water

1 cup flour
1/2 cup salt

1 Tbsp cream of tartar

1 Tbsp oil

Food Coloring

Heat all in saucepan on low to medium stirring continuously until desired thickness. Knead to smooth..caution...it will be warm.

White Chocolate Chip Cupcakes

This is my newest recipe...I totally love it. Smells delicious. And got rave reviews from the kids. I made 48+ cupcakes tonight for Sunday School... and a few mini's to keep for us. This is a pic of the 'raw' mini and it was beautiful. The batter is very fluffy after mixing.
White Chocolate Chip Cupcakes
1 box golden vanilla cake mix
1 4svg pkg of instant vanilla pudding mix
2 cups sour cream
5 eggs
1 cup butter, melted
1 tsp vanilla extract
1 cup white chocolate chips
Beat 1st 6 ingredients until well blended. Mix will be thick. Stir in chips. Scoop into lined tins. Bake 350 for 17-22 min. Don't overbake. Cool completely in pan.
